What can I do if someone has hacked my phone? They can hear and see everything I do.

Unless you have jailbroken your iPhone it cannot be hacked. If you are receiving a message stating that someone can see and hear everything you do then that message is fake, ignore it. Those messages are designed to incite fear and panic and get you to do something you wouldn’t otherwise do, like download something or click a link.
Report them. Depending on your carrier, and what the text/emails are saying, there should be a way to report it. If it’s a text it will say ‘ I don’t recognize this number, do you want to report them”. Now I can’t tell you if this is part of my AT&T free security program, because I slapped every and any way to report stuff like this after my identity was stolen. I’ve gotten an email like that, only slightly worse in their threat. I also find from my carrier what their text/email address to send it too, and then if it mentions a specific company “ You’ve won a $50 gift card from CVS”, I find out if CVS wants people to forward emails like this. Most do. There is a federally funded program to send them to, ReportFraud.ftc.gov. They send it too 3000 other law departments. I’m not shy about reporting spam/fraud. Then block the numbers.
